Faith's Blessing

We decided to bless our new little Baby Faith at our house on the Sunday evening before Christmas since we'll have the out of town family members here. I realize it's a busy time of the year, so we totally understand if you've already got something going on, but wanted to invite everyone just the same :).

For those of you who don't read my blog, I attached a picture of our little Faith born in November weighing 9 lbs 6 oz :)

I just made the best thing ever.

No lie.

I may never eat anything else again.

"What is it?" you're wondering.

Lemon squares.

That's right folks.

Lemon squares.

But these aren't your run-of-the-mill,

goopy, bright yellow monstrosities

covered with a layer of powdered sugar

just waiting to choke you.

(Is there anything worse than inhaling a lungful of

powdered sugar just as you take a bite of

what's supposed to be a delicious treat?

I submit that there is not.)

Any how. . .

Here's the secret recipe.

I got it from a food blogger

who got it from a can of Eagle Brand.

Lemon Squares

Prep Time: 15 minutes plus baking time
Preheat To: 350ºF (180ºC)*
Serving: 9 3" squares or 18 smaller bars

Ingredients:

250 mL (1 cup) quick oats, uncooked
250 mL (1 cup) flour
125 mL (1/2 cup) flaked coconut
125 mL (1/2 cup) coarsely chopped walnuts
125 mL (1/2 cup) firmly-packed light brown sugar
5 mL (1 tsp) baking powder
125 mL (1/2 cup) butter, melted
300 mL (1 can) Regular or Low Fat Eagle Brand® sweetened condensed milk
125 mL (1/2 cup) lemon juice

Preparation:

1. Combine oats, flour, coconut, nuts, sugar, baking powder, and butter until crumbly. Pat ½ of crumb mixture evenly on bottom of 9x9" parchment paper-lined baking pan. Reserve other half.
2. In medium bowl, combine Eagle Brand and lemon juice. Pour Eagle Brand mixture onto crumb layer. Sprinkle remaining crumb mixture on top.
3. Bake in preheated 350°F (180°C)* oven 25 to 30 minutes. Cool thoroughly and cut into squares.

We just wanted to let you know that our sweet Haleigh Sherie Hale was born June 16, 2009 at 11:12 pm. She weighed 7 lbs 7 ounces, and was 20 ½ inches long.

Mommy and baby are doing great.

Caramel Apple Fun

As a celebratory Hoo Rah! that the weather is finally cooling off and Fall is "in the air", we made caramel apples together as a family. It was so fun and the kids loved the chance to get sticky and messy without mommy getting after them. It brought back the memory of a little song we sang as kids, "Caramel apples on a stick... Makes my tummy SICK SICK SICK!!!" We all agreed that the sick tummies afterward were well worth it.

Just thought I'd post a picture of my Bath and Body Works haul. It's missing a nail file 'cause I used it already, but pretty great deal. The coupon expires on Saturday, 4/12. I spent $12.50 total. You only have to pay for the small item as long as the other item is under $11, but the Air Freshner thing was $12, so I paid an extra $1 for that, $1 for the mini-lotions and $1.50 for the files (didn't see the lotions 'til I'd bought 5 files :( )plus tax of course. The body creams I got were the 8 oz. ones that are $10.50 regular price. Let me know if you need me to e-mail you the coupon again, they'll let you print and use as many as you'd like. I chose to just do it 8 times, that didn't seem out of control and made my trip worth it to me.

Ryleigh and Liam both received trophies in karate. They competed in a tournament, they didn't place but still got a trophy. They were super excited about it. Hope you enjoy

Liam just finished his first season of T Ball. I thought I'd share a few pictures of him playing and receiving his trophy. Throughout the season he improved tremendously. He started out really being grumpy about going to the games. Loved going to practice, but hated the game. Devin would have to run the bases with him and stand right by him while fielding. As you can see in these pics Devin is no where to be seen. He was the biggest kid on the team by a full head and seemed to be the only one with his head in the game. He plays really well whatever position the coach puts him in and was the only kid who could get the ball to first base. That doesn't mean the first baseman always caught it, but Liam got it there. He was so excited to get his trophy at the end. He has always liked having his daddy's trophies in his room but they are quickly getting replaced with his own. This is his 2nd trophy, he got one in karate too.
